The Vistro Burger
The Graceful Ordinary in St. Charles is bringing back its Big City Burger Collab series, and this time it's teaming up with Chef Paul Virant, a four-time James Beard Award finalist and the 2024 Jean Banchet Award winner for Chef of the Year.
Virant, who runs Gaijin in the West Loop neighborhood of Chicago, Vistro Prime in Hinsdale, and Petite Vie in Western Springs, will bring his signature Vistro Burger to the local restaurant for a limited run starting May 7.
Here's what to know:
The burger: The Vistro Burger comes on a toasted brioche bun with pimento cheese, caramelized onions, crispy bacon, and pickled asparagus for $18.
When to get it: The collab runs Thursday, May 7 through Friday, May 15 during happy hour (Tues–Fri, 4–5PM), Saturday lunch (12–3PM), and Sunday brunch (10AM–2PM).
Opening night: On Thursday, May 7 from 5–8PM, Virant will be on-site selling products from his small-batch preserved foods line, Jar Sessions, and mingling with diners.
The series so far: Previous collabs have featured top Chicago chefs including Paul Levitt of Publican Quality Bread, Dominique Leach of Lexington Betty's, and Kaleena Bliss of Cindy's Rooftop.
According to a release from The Graceful Ordinary, Virant is known for his focus on seasonality, preservation, and Midwestern flavors, making the pairing with Chef Chris Curren's rustic tavern-style menu a natural fit.
