A new Mexican restaurant called Gallo Santo is moving closer to opening in downtown St. Charles, with city officials set to consider a liquor license request.
Here’s what to know:
Location set: Gallo Santo hopes to open at 215 West Main Street, just west of the Fox River in downtown St. Charles.
Liquor license review: The Liquor Control Commission is scheduled to review a B-1 liquor license application for the restaurant at its January 20 meeting.
Family-run concept: The business is owned and operated by family members who told city staff they plan to open a Mexican bar and restaurant offering breakfast and dinner, plus tequila, beer, wine, and cocktails.
Opening target: According to city paperwork, the owners are aiming for a March opening, depending on the completion of renovations and final approvals.
If all goes according to plan, Gallo Santo would add another sit-down dining option to St. Charles’ downtown corridor in 2026.
